My best friend and I were reunited last week or so, and we decided to do something we both love: baking! I came across this idea when I first discovered (and became obsessed with) Luxirare. You’ll see what I mean by obsessed in my future posts — I’ve already started trying out a few other recipes. We also followed a more detailed guide posted by the cake pop queen Bakerella.

In short, the pie pops were too cute to eat. But once I had a taste, I found that there wasn’t enough filling for the pie crust–it was too dry. Which can’t really be helped, because if you over-stuff with filling then it will ooze out of the pie shell and go all over the place. Maybe next time I’ll try a variation of this recipe to amend that problem.

**I used home-made dough and store-bought filling.

piepops 1024x682 pie popsUse a cookie cutter to cut out the pie pieces (you can use normal shapes like circles or rectangles. abnormal shapes will probably be harder to use)

piepops2 1024x682 pie popsRemember that each pie pop takes up two of these circular pieces, so make sure you have enough.

piepops3 1024x682 pie popsPlace the lollipop sticks in the center of each piece and press down (but not too hard). Space out the pie pops.

piepops4 1024x682 pie popsOnce you put the fruit filling (we used strawberry filling) in the center, place the top layer on and press down on the edges with the lollipop stick to close it (and to make it look cuter!). Be careful on the amount of filling you place, aka don’t put too much.

The next step is important (and crucial). With a pastry brush, slather egg whites on to the top of the pie pops. It creates a nicely toasted texture. And for the oven time, I heated the oven to 350 degrees fahrenheit and just waited until they were golden brown (20+ minutes).

And there you have it. A nice little portable treat that you’ll love making (because it’s so easy).

I went on a weekend trip to palm springs with my family, and on our way back to LA we stopped by the desert hills outlet. I walked in determined to come back with a great purchase, and unfortunately walked out empty handed. That feeling when you can’t find anything for yourself, while others around you are struggling to hold multiple shopping bags…is quite something. Palm Springs is always randomly fun and relaxing if you can ignore the disgustingly hot climate.

Before college I would always voluntarily skip breakfast in order to get that extra 5 minutes of sleep. But this past semester most of my classes started past noon (thank God), so I began to focus more on the “most important” meal of the day. The picture above is greek yogurt with honey and fruits — which is amazing because I love mixing dairy products with fruits; and who doesn’t like honey? Here are some of my favorite breakfast items or just snacks (I like to think that they’re healthy and good for me):

  1. Greek yogurt with honey. The Greek restaurant I went to mixed in some fruits (as shown above), which made it even better.
  2. Cottage cheese with grapes, persimmon, or which ever fruit you prefer (I think it’s clear now that I love mixing dairy products with fruits).
  3. Good ol’ cereal and milk. My favorite is Cheerios.
  4. Tortilla chip and hummus. Okay, I know this doesn’t really count but these days chips+hummus is my favorite snack combo so I just had to include it.
  5. Coffee and a pastry. Definitely not healthy, but for days when I’m in a rush it makes do.

Whenever I’m able to start my day off with any of these options, I feel like I’m starting my day right. For me, breakfast is certainly the most important meal of the day because I feel happier and more composed as I start the day.
